A step warmer than its sweet counterpart, this chilli jam combines red chillies with root ginger to give a gentle but lingering heat. The extra warmth is brought by using more of the chilli pith, which holds the heat, as well as its seeds. Warming rather than fiery, it offers depth without losing flavour. Especially good with late suppers, it adds comfort to simple dishes and pairs beautifully with cheese on fireside evenings.
